Recording from capture device from the command line

I want to use vlc on Linux to record from a capture device, and I want to do this from the command line with no gui. I can use vlc with the gui to play the video and sound from the device, but I don't know how to record to a mkv file all done from the command line, without displaying the live video and sound.
