Recording Continuous Stream In Chunks

What I'd like to do is have VLC do its usual 'stream to file' bit, but rather than one behemoth of a file for a continuous stream, I'd much rather it go into smaller files (i.e. create a new file for every hour recorded, or a new file every 100 MB's, etc.)

How ought I go about accomplishing this?
