No video on MKV to MP4 conversion? (VLC)

I'm trying to convert my MKV files to MP4 on my Windows 10 laptop using VLC. I have tried reinstalling, downloading an older version (2.0.1), as well as spending hours on forums/Google/YouTube trying to fix this and I still get the following error.

Whenever I try to convert an MKV file to MP4, the result is an MP4 file that, when opened, is a black screen with all the correct audio (see the picture below).

I have tried all different sorts of combinations on the Convert/Save settings and so far nothing has worked. Can someone tell me what I'm doing wrong/what the error is here? Let me know if you need more information to diagnose the problem. I would really appreciate the help!! Thank you so much!
