Convert Color MP4 video to black and white

Hello,
I am using the latest version of VLC media on Windows 7. I have read help files related to converting color video to black and white and I think I have the steps correct. The player looks like it is making the conversion as noted by the blue dot movement at the bottom of the screen but nothing happens. I changed Profile to sepia and experimented with other selections. Video still in full color.
I would appreciate some help, though be warned, I will need step by step instructions and please specifically tell me which Codec profile I need to choose to create black and white video from color MP4.

Set Saturation slider to minimum in Video Effects control panel. Then select and edit a transcoding profile where you have to enable the "Image properties filter" in "Video codec" settings.
