Running the latest 3.0.0 nightly build (Jan 10 2018)
1) The full screen volume bar and seek bar color is blue, can we change this to white?
2) Also, OSD font is default despite choosing a different font.
Are these changes not possible with the nightly builds?

It is not doable, for now.
That's unfortunate, I just googled "change blue volume bar vlc 3" and found this post.
Clearly there will be others users with this request.
The blues bars look ok but my criticism would be that white is better than blue because white does not clash with the video content that's playing as much as blue does.
