Is it possible to shuffle all music? can't seem to figure it out. I do not see anything on wiki.

No, this is not supported at the moment, neither on iOS nor Apple TV.

It is not supported because it is not there yet. We support shuffling on Macs and Windows computers, but we never made that code available to mobile applications as of yet. This will definitely come, of course.

This is a pretty fundamental capability missing that keeps me from using VLC on my ipod touch. Shuffle in the android version on my Samsung works fine so when can I have it for my ipod?
