VLC losing mp3 encapsulation

I have a video that I took with my phone that I want to rip the audio from. The video is in .mp4 format and is 47:54 long.

I can do this fine with convert/save and selecting the Audio-MP3 profile. HOWEVER: The default settings are much higher quality than I need, so I want to decrease the hz, bitrate and channels.

When I edit the profile - even to do NOTHING and save - it loses the ability to save as .mp3: I can only save as .ts or "all files". Selecting All Files and manually typing the .mp3 extension results in an unplayable 31:01 length garbage file. The .ts file does play, but again dies if I change the extension to .mp3.

I believe the problem arises because the Encapsulation tab in the edit dialog does not have a .mp3 setting so it defaults to mpeg-ts.

How can I make VLC save as an mp3 with edited settings without losing its ability to save as .mp3?

I'm also trying to split the video into 5 minute pieces. I'm using the Record in Advanced Tools. However, it adds "-.ts" to the extension. I want the pieces to come out as plain .mp4's. Although I can chop off the -.ts and it apparently plays fine, it loses the length record. Any fix?

Use RAW encapsulation.
