What are your logs?Yes on my system (latest Mac Pro) it is completely unusable, which is a great shame, given the huge amount of voluntary work that has gone into it.
I'm not sure if this was a reply to my post or not but it doesn't seem to have fixed the stuttering audio/video for me, I'm afraid.A new build of 2.0.3 for Mac will be out to fix this issue.

Not sure. I use the mini display port to an Apple LED monitor and output sound to the monitor's speakers. Hope that tells you what you need to know.Ok, but this doesn't answer the most important part of my question. Do you use optical or analog audio output?
Exact same problem here on MacBook Pro 13" latest OSX to date, i7@8GB ram & 500GB HDDI'm using a MacBook Pro 17" OS X 10.7.4 with 2.66 GHz Core 2 Duo processor, 8GB RAM, 1TB HD with 650GB free.
I get the problem with all video files but I mainly watch .avi and .mkv - from 1080p/720p down to 512 x 288px. I am using the MacBook Pro's built in speakers.
The problem started for me with VLC v 2.0.0. It doesn't happen with v 1.1.12, so I use that. It doesn't happen with any version of QT or any other video or audio platform.
I'm not sure if I am experiencing the same problem as other people but I get momentary skips of about half a second in audio and/or video every few minutes. I often have to rewind to listen to dialogue again so I know it isn't the video file.
