How do you transcode a video, including subtitles?

For questions and discussion that is NOT (I repeat NOT) specific to a certain Operating System.

How do you transcode a video, including subtitles?

When I try to transcode a video, I select "Add Subtitles to transcoded video", but the finished product doesn't contain the subtitles. How can I transcode the video so that the final product contains hardcoded subtitles?

You may want to try AviDemux.
