Hi,
VLC 1.0.0 RC4 had a 64-bit version for mac, but now 1.0.0 is released I can't find a 64-bit version.
What has happened to it?

64-bit version is experimental. you don't need it. just use the standard vlc.

It wasn't published because it didn't match our quality criteria, blabla.
In fact, it just crashes on quit when using Leopard and we don't know why yet. Once this fixed (will happen in 1.0.something), we will publish it officially. A few other things still need to be done, such as implementing proper subtitles rendering, which is only supported in our 32bit builds right now, but this will follow later on (probably in 1.1).
