as long as familiar linux has vlc available for it, I see no reason why iPhone needn't have it, BUT...
1. iPhone is just a single gadget, not at all popular enough to put indevelopement efforts
2. The processor is quite light, and only something like apple's own OS, optimised for iPhone can work
3. There is already a project called Rockbox, which should serve your perpose(I guess the iPhone port is not yet developed, but still...)
......anyway, as long as a devloper is intrested in VLC for iPhone and iPod Touch, you are lucky.

On Linux, blindly use VLC, SMPlayer, Kaffeine, GXine, Totem and MPlayer
