Command-line workflow questions

hi, i've got some questions and wasnt able to get a real clue out of the documentation.

I want to use the vlc command line tool to built a work-flow doint the following.

demux avi (mostly xvid+mp3 or xvid+ac3)
convert audio to aac
join video and audio tracks (like joining a 2cd to a 1cd version)
muxing the converted and joined audio into a mp4 with one or more text-subtitle-files (srt)

can I do all that with the vlc command line options? I'm not sure about the joining of video and audio parts and embedding text subtitles.

I have pretty much the same problem. VLC crashes A LOT when I use mkv files.

I work on a Macbook Pro 15' with Leopard 10.5.2.
