If you're able to use VLC to stream to a file then it should be possible to view the stream in real time, although perhaps you meant you're able to do that without VLC?
If it's an IP camera, there may be a way of opening the video stream. If there is one you might be able to open it in VLC via "Media >> Open Network Stream...".
Also VLC does have a "Record" button (to see it go to "View >> Advanced Controls") which provides an easy way of writing the stream to a file (should go into "My Videos" on Windows), if you're able to see the content and want to capture it.
