The online docs say that there's an option to encapsulate the stream as AVI:

Yet version 0.8.1 of VLC does not include the option on the "Stream Output" page.

Am I missing something?

Apologies -- I need to update the doc. AVI encapsulation was problematic, and it was deprecated (removed as an encapsulation method generated by VLC, though it should play existing AVI files fine).
