streming desktop to file

Figured out how to actually do this. Now, the video quality intermittently worsens then fixes itself. Any way to prevent this from happening? Also, how do I improve the video quality?

What codec are you using? Try e.g. M-JPEG with a high bitrate. VLC can't output/encode losslessly AFAIK, so you could try e.g. (assuming you use Windows) CamStudio which works well for screencapturing and can use e.g. the lossless CamStudio codec.
