Recording stream with vlc... What about lags and interruptions ?

Hello all,
I'm discovering the way to record a video streaming with VLC, through the gui for the moment (hope do it with command line in a second time).
It's seems working fine, but, for example, if my target file is named vid.mp4, and the stream is unavailable for few seconds (a connection problem) , the record is stopped.
Or, sometimes , once the stream available, vlc ask me to replace the previous file.
Is there any way to continue in the same file, to add the rest of the stream into only one video?
I hope I was enough clear, I don't speak very well English.
