Transcode video to mp3

Hi,
after some tests i made this command for convert any video file to a mp3 file:
vlc -I dummy "/home/matteo/Scaricati/file.mp4" :sout='#transcode{acodec=mp3,ab=320,channels=2}:std{access=file,mux=raw,dst="/home/matteo/Musica/file.mp3"}' vlc://quit
but when i reproduce it, it is glitching.
I ask help to you to fix it, thanks and scuse me for my english
