Where is the option to rewind X seconds after pause?

There is no such setting. You can double tap to rewind a few seconds or use the seeking buttons.

That does not work with my headset. There is only previous track, pause, resume, and next track.
A far more convenient option is for Android VLC to rewind X seconds after each manual pause.
