Multiple streams? Hints wanted...

Hi!
I'm looking for some streaming possibilities for 3 different analogue signals (75 ohm).
Has anyone an idea if I could use VideoLAN for this?
The best solution would be if I could work with 3 inputs in one computer (acting as server), and generate different IP-streams (either unicast or multicast) with this.
Can anyone advice me on this subject ? Hardware and software-hints would be appreciated!
