Activate the Extended GUI ni the parameters.

in the player preferences go to video > filters > image adjust. there you can adjust contrast, brightness, hue, saturation and gamma.

in video > filters you have to click on the checkbox "image properties filter", then save your setting. after reload vlc media player will automatically start with your settings.

It's exactly what i done but my parameters are never saved...

In fact, the checkbox "image properties filter" is already checked but the contrast & gamma values i modified (to 1.5 & 1.1), after a VLC reload come back to default, 1.0 & 1.0

It's a bit annoying because it forces me to change parameters each time i watch a DVD.
I use the Linux version 0.8.2 Janus.

this is a known bug. It has been fixed in the developement version (at least for linux)
