Recording multi-stream files

Does anyone know how to record a file with 2 or more video streams? I can open a multi-video-stream AVI file and record it as a multi-stream MOV file, so I know that VLC can write files with multiple video streams. But how could a record a multi video-stream file in which the video streams come from different sources? Can anyone suggest a way to do this? (an ugly hack would be fine)
