No Sound in recorded File

Hi, I am using VLC 1.0.5 and when I am recording a DVD over the red recording button, I get a file without an extension name. This file can be played with the VLC-Player without any problem, I see the movie and I hear the sound. But when use another program I can see the movie but there is no sound at all. Similar Problem but I get sound:
VLC 1.0.5 . When recording portions of a DVD using the red recording button. I get files with extensiom .mpg. When playing these, I sometimes get Video and Stereo sound but not the subtitles. Sometimes, If I play the same files again, I get sound but no Video (no 'pictures').
Questions :
1)
Is there a possibility to relect/unselect recording of subtitles when recording using red button?
2)
Why is it so that a given recorded mpg -file sometimes does play with piture (Video) and sometimes not? Is it VLC that is unstable or tthe underlaying XP - or the user? Are ther some optional settings or by sytem created temparary files etc that must be controlled?
