Speed and Playlist in New Version

I've upgraded to the newest versions, but I can't find how to do things I used to be able to do. Changing speed used to speed up or slow down the video and audio, but now it sort of chops it up (i.e. slowing down used to make the video and audio "slow motion" and speeding up would do the whole "chipmunks" thing, but now instead it just chops it up so that you only see spurts at a time). I'm sure anyone using the new version knows what I mean if they don't know how it used to be.

And the playlist automatically sorts the songs or videos, instead of letting me choose for myself the order I want. I don't know how to fix these things on my own. I don't mind the way they are, I just want to be able to get the old way back as well. I don't remember what version I was using.

*Update* I'm not interested in downgrading because I upgraded to play newer flash videos that had issues. I just want to know how to do these things in the new version.
