H.261 capturing

Howdy,
I'm trying to capture H.261 video from a Darwin streaming server; the video stream in question originally comes from a Polycom VSX videoconferencing unit. The reason I am doing this is because (ultimately) we're trying to use a Helix server to broadcast the stream from the VSX, but hitherto it has not worked. It's not a networking issue, so I suspect it has to do with the video stream data. That said (based on a recommendation from the Helix support folks), I am trying to save off a video of the stream with the data as close as possible to the original, and then try to broadcast that video from the Helix server to see if it works.
In either event, I'd like to use VLC to capture it, but thus far I have had little success. What file extension should one use? What encapsulation model? Is this even possible in the first place?
