Deleting audio track?

Hi, I'm new to the forums, but I've been using VLC for quite some time.
I downloaded a video, and I'm trying to upload it to iTunes. If I convert the video file, I can upload it to iTunes. Problem is, the video has two audio tracks, one Japanese and one English. Obviously, I want the English audio track, but when I upload it to iTunes, it plays the Japanese audio track.
So, is there any way I can delete the Japanese audio track permanently?

What type of file/what are the codecs etc.?

I assume you're referring to the audio codecs. I guess they are A/52, DCA, twolame, and Vorbis. I'm not intelligent when it comes to codecs, or videos, for that matter.
As for the file type, all of the videos are .mkv.

If they are MKV the easest way to remove the audio tracks (without transcoding) would be to use a tool such as
mkvtoolnix.
Open mkvmerge GUI (mmg.exe in Windows), select the MKV file, deselect the unwanted audio track(s), enter an output filename, then press "Start muxing".
