Why are subtitle fonts different in some videos?

For questions and discussion that is NOT (I repeat NOT) specific to a certain Operating System.

Why are subtitle fonts different in some videos?

Why is the subtitle font different in some videos? I'm playing a MKV video file, H265 encoded, and the subtitle is appearing in a different font than usual on my PC. Any ideas why this might be the case?

Some files have embedded fonts, and other specify a font family to use.
