Extracting the audio track from the main MKV file.

Hello! I have a question about working with MKV files. There is a source video in MKV format, with several audio tracks built into the file. Is it possible to somehow extract one of the audio tracks into a separate audio file? At least with the help of third-party programs.
P.S. Is it possible to do the same for subtitles, extracting them into a separate txt file?

Audio can be extracted with VLC. Subtitles can be more problematic due to lack of muxer modules.
