How to select quality of adaptive streams

When playing an adaptive stream (DASH .MPD/HLS .M3U8) from a playlist that contains multiple quality levels, how do I select which level I want?

And how do I prevent VLC from automatically switching levels?

(When I go to Video > Video Track it only shows one track.)

adv prefs -> adaptive

* First read troubleshooting guide VSG:Main
* Always provide verbose LOGS ! (command line or from gui)
* Always check your issue against a developer build from Nightly Build of VLC
* Tell us when your problem is solved !
