Changing Default Audio - PLEASE HELP!

Ok, so I'm brand-new to VLC and I need to convert some files for my iPod.

I've been using Prism Video Converter, and it's great, but the particular files that I'm trying to convert are dual-audio, and the default audio is Japanese (which I can't understand). The files also have audio in English, as well as English subtitles, and both work fine in VLC.

What I really need to know is how to save the files so that the default settings are either for the English audio track, or the subtitles. Then I can just convert them in Prism.

Please help, I'm at the end of my rope, and thanks in advance.
