You can use the command line --audio-track 1 to default to the 2nd audio track (track numbers start from 0 internally).
You can also change that value in the preferences in Input/Codecs (you need to tick the "Advanced options" check box).
Last but not least, if you're using an m3u playlist, you can prepend a "#EXTVLOPT :audio-track=1" line to each of your lines.
