how do i get persistent audio and subtitles with playlists?

So.. i cant find any obvious settings in my osX client to allow me to get persistent video and audio settings in my playlists.

(in this case i have a bunch of files that default to english when i want japanese with subtitles)

on a related note, postprocessing seems to be the same way.

i can only assume this can be done in the general config area, but no matter how much poking around i did i couldnt find it.
