How does the record button work? Where are the files stored and in what format? How do I change the settings available for format, file location, etc. if available?
I have been searching the documentation for 30 minutes and I can find absolutely no documentation on the "advanced controls" of the windows GUI interface or the functioning of the "record" button.

How does the record button work?
It stores input feed as if to disc.
Where are the files stored and in what format?
My documents by default, but it can be changed (Tools -> Preferences..., Show settings: All and Input/Codecs and
Record directory or filename). Format is same as input has and it cannot be changed.

The video came out kind of bad quality and a little pixelated - especially the first few seconds were REALLY bad. Any ideas how to correct? Thanks.

That cannot be fixed. Since VLC starts recording immediately after recording button is pressed, the first frame might not be I-frame (aka key frame) and that will cause pixelation and other artifacts to first frames.
You can cut out the bad part with video editors like AVIdemux.

You might want to check the settings at Tools\Preferences\Inputs & Codecs
The setting for "Post-Processing quality" should be set at "6" for the highest quality.
Always remember to "Save" your changes, then close the player and reopen it for the new setting to take effect.
