How does one control ffmpeg encoder options in transcoding

I have a newbie question. I see many documents where people use venc=ffmpeg. Does this only work in linux and not in windows? Or is this a version 9 issue (I'm using version 8.6i because, as other posters point out, transcode is broken in the latest v9.6).

Also I need to be able to control encoding features ... eg. I-frame interval etc. I see many people use options like venc=ffmpeg(keyint=1) and venc=ffmpeg(hurry-up). Is there a list of controls that are documented somewhere?

There are some under FFmpeg audio/video decoder section in command-line help (I am not sure if every option is listed there)
