How do I set default subtitles to English?

I just installed the VLC media player, and the first movie I tried to play had Japanese subtitles enabled. It is an English movie so that makes no sense! I looked in the VLC settings but couldn't figure out how to change the default subtitles to English, nor even to the first subtitle option in the list which would usually be English for my movies. I also did a search but didn't see the answer.

Where and How?

You are watching DVD movies or some MKV/OGM files?
Settings -> Preferences and Go to Input / Codecs and tick Advanced options and you should see subtitle track and subtitle language options.

It's a movie on my hard drive in a VIDEO_TS folder with VOB files, etc.

I took a look in that location, but it's too complicated and technical. For example it wants 2 or 3 letter country codes, and I have no idea about that. So I need some more detailed instructions how to set it for default English subtitles. Thanks.
