Playing demuxed MPEG 2 ES streams (Video AND Audio)

I searched this forum by the search function and by hand nearly 2 hours now, but didn't find anything covering my problem.
So if this is answered somewhere else, please redirect me there.

I have demuxed MPEG 2 ES streams from a TS (Topfiled 5500PVR), where each stream is in one file, eg:
Cool Runnings.ac3
Cool Runnings.m2v
Cool Runnings.mp2

How can I play back the video including all audio streams and not only one of these ES streams using the GUI?

If I open the .m2v file it plays back well, but without any audio. If I open one of the audio stream files (.ac3 or .mp2) it plays back well, too. But this time without video output...

MediaPlayerClassic recognizes that each stream is in a single file and muxes them together while playback. I can even select which audio stream it should play.

There is a possibility within VLC, isn't it?

PS: I know, that VLC can play topfield .rec files, but I would like to use VLC for the demuxed files in order to check, if I made the cuts right while demuxing prior to burn it on dvd.

Not without muxing them back into a container. This is true for most media players.
