How to convert mkv to mp4 selecting secondary audio stream?

Hi guys. Been a lurker here for quite some time, but finally joined today. I have been using VLC to play files for years, and have done some converting of files as well. I am now trying to convert some of my movie collection to a specific format so its compatible with dlna for my televisions. The specific file I am having trouble with is currently a .mkv, Stream 0 is H264-MPEG-4 AVC, Stream 1 is A52 Audio in Deutsch, and Stream 3 is DTS Audio in English. What I'd like to do is convert this mkv to either a .avi or .mp4, strip out Stream 2 (as I neither speak nor understand Deutsch  ) and have the Stream 3 as the default and only audio track of the new file. The Stream 3 audio will also need to be converted to aac or pcm. I did some searches through the forum, but I either don't know what I'm looking for, or a thread doesn't exist yet. Thoughts or ideas? or a pointer to an existing topic that I didn't find...

Thanks, Chris
