Difference between Record button vs Convert a stream?

In VLC Media Player (i am using v2.0.3.) it seems you can record a stream by playing the stream, then View / Advanced Controls / and hit Record button; the alternative is to use Media / Open Network Stream / Convert / destination file / hit Start.
Is there any difference, and should i use one over the other?
(by the way, with the second method to convert, the "Display the Output" checkbox was useless as it was frozen on the same screenshot, however recording was fine and the file size kept increasing whenever i refreshed the windows explorer pane).
