I have a 5.1 speaker system and sound card but I regularly use my headphones.

If I have my soundcard set to 2.1 then VLC will default to stereo even if the video has a 5.1 audio track.

Is there a way to have VLC default to stereo even when the soundcard is set to 5.1?

Menu Tools -> Preferences (Show settings = ALL) -> Audio -> Output modules -> DirectX
Then on the right panel select Stereo in the Speakers Configuration drop down list, then save, exit and restart VLC.
