Using VLC on an Ubuntu server without graphics support

We use VLC on an intranet Windows XP machine to encode and stream a dirctshow video input.
The encoding is done with x264+aac, the streaming is done in http with flv muxing.
An Ubuntu server, placed in the dmz zone, is able to receive the intranet http streaming and stream it on internet.
How can we run vlc on an Ubuntu server without graphic support?

You just start VLC from the CLI.
