The FAQs say to go to the "settings menu" and adjust the "Extended GUI" if the video playback is too dark. Honestly, I'm not an idiot, but I'm feeling like one right now. I cannot find any "settings menu" or anything that has to do with "Extended GUI" including within preferences.

The FAQ describe the Windows/Linux interface, while you are using the Mac version of VLC. Have a look at "Extended Controls..." in the Window menu.
