Caching

Is there a reason that the OS X version does not have a caching option whereas the Windows version does? I find this useful for unreliable wireless networks - I set it to about 3000 and things play fine. I'd like to be able to do this on OS X too. Is there a way to set this as a default for all files opened (with 'quick open' or otherwise)?

You can set it in the preferences, but there indeed currently is no way to do this from the "Open.." dialog
