VLC as Music server set up

I have an '18 3.2G i7,6C mini on Monterey that I'd like to use as a VLC server. The music is on 2 external drives mounted in a cMP3,1 and connected to the mini on a LAN via an unmanaged switch.
Is there a specific read for this or a simple set-up?

VLC is not the correct app for this. Consider using a UPnP multimedia server app for this - there are many (free) options available.

I've tried and use (for now) Emby/Jellyfin & Plex.
All have transcoding & shuffle play issues via the web browser server interface.
Emby & Plex client apps are a trifle $ for what they are, although I may to resort to Emby if I can be sure the app doesn't have the same issues.
Jellyfin is good and free, but it also has transcoding issues as well as adding new media & scan issues.
The transcoding issues are with ALAC music, which is the greater portion of my music.

I got VLC to work, but the shuffle mode doesn't get to subfolders, even with the "proper" settings.
