How can I record Mac screen please?

Hello all. I was looking around the net for a free screen recorder for Mac for occasional use whenever and found VLC has this option so I installed it. I was searching for instructions for screen recording and found this video:

I am not seeing the same options on my end below so can anyone help with this please?
