no longer able to specify Snapshot destination

It seems that there is no longer an option to specify where snapshots are sent in Monterey OS12 as theer used to be. it defaults to the user's pictures folder. There is no longer a setting in the preferences to change it - WHY? You can apparently change it in Windoze according to the wiki on it. But not in macs?
