I have a FLAC audio track with five overtures, each about 15 minutes long. I'd like to make five FLAC files, each with one piece. I looked in VLC's User Guide and couldn't find the answer to this -- sorry if I missed it.

This is not something VLC can do easily. Consider using a designated audio editing tool such as Audacity.
