no audio being saved with DVD

Hi, I'm a light user, and trying to import and save a DVD movie (to add subtitles to it). The DVD plays fine in VLC, but the saved output has no sound. I thought it was this particularly troublesome DVD I've been messing with, but I just tried another DVD with same result. I don't think VLC is saving any DVD with sound??? I'm on the latest version 3.0.8, on imac desktop with latest Mojave. Can someone try same experiment?
My steps are pretty easy.
-- I revert to a default VLC download state by going to VLC preferences and clearing all, and restart VLC. (just extra careful that I didn't leave VLC in a bad state!)
-- I load the movie from the DVD with open-disk, disable-menu, and select the target title. The target title loads and plays fine.
-- I select convert/stream, drop that item in the playlist onto it. Leave as default H264_mp3(mp4). Select dummy filename and save.
The file output .m4v has no sound in mac-preview, in QuickTime, or in VLC. Same result with 2 DVDs.
As an experiment, I also tried a custom save, where I set the audio in the audio codec section to "keep original", and no difference.
I've tried many experiments in VLC with the 1st DVD which has been a very troublesome in another tool. But then tried this 2nd disk and concluded maybe it's a more widespread problem here.
Any thoughts? Can someone try a DVD too?
