Convert/Stream... on macOS: where's Start?

The doc for the Convert/Stream... feature says:

In VLC, go to "Media >> Convert / Save..." (Ctrl+R).
Add the input file(s) or stream(s) you want to transcode. Press "Convert / Save".
In the "Convert" windows specify the destination file name (including file extension - e.g. on Windows "C:\out.mp3").
Select the desired codec from the profile list. To check/edit the settings of a given profile press the "Edit selected profile" button. Profiles can also be added/deleted.
Press "Start".

In macOS, "Convert/Stream..." is under the File menu, but OK. I choose that, pick the input media, pick the Profile, choose the destination... and there's no Start. If I choose Save (the only option), the source gets added to the current playlist, and a placeholder file is written to the destination. Clicking Play for the playlist results in a message that the output file exists, and no conversion occurs.

So what's the correct process for converting (e.g.) an AVI into an M4V?

EDIT: Sorry, forgot to include context. VLC 3.0.0 on macOS 10.12.6 on a MacBook Pro (MacBookPro13,2) with 16GB.

Same question In windows VLC 2.2.8 as well as VLC 3.0.0- through media - convert/save, file - (mkv toolnix .mkv of mp4+mp3 selected), use subtitle (aegisub .ass file selected), convert /save- convert selected, then display output, browse to give output file name, Encap (MP4/MOV selected), Video codec (H264 selected), Bit rate (not used selected), Quality (25 selected0, Frame Rate (Same as source selected), Resolution-Video (Scale auto selected, Frame Size (width 640px and height 360px entered), Filters -(none selected), Audio Codec - Audio - track-(keep original selected), Subtitle (DVB subtitle and Overlay subtitle on Video selected). Earlier had set Tools Preferences All Input/Codec , Video Codec, FFMpeg - Strict Standard Compliance minus 2). Uploaded over hundred .mp4 lyrics videos to Youtube.
Now changing to MacBook Pro macOS 10.13.3 high Sierra VLC 2.2.8 OR VLC 3.0.0 has only Convert/ Stream which has no provision to use subtitle (add subtitle), also Convert&Stream custom Spec has less choices than Windows version for example No quality Spec. Unable o make & save .mp4 with hard coded subtitles (.ass)
In Mac version VLC 2.2.8 or VLC 3.0.0 trial through File- Advanced Open File , File, Add SubTitle (here provision seen available to add subtitle), then stream output settings etc results in good video play alongwith subtitle; however the saved video file has no recording (hard coding) of subtitle
Convert/ Save arrangement & features available in Windows version VLC 3.0.0,- if Exact same arrangement & features are made available in Mac Version VLC 3.0.0 at Convert/Stream it would help make mp4 video audios with added hard coded subtitles (say .ass subtitle)
Prefer not to install windows 10 in Mac just for use of VLC windows version. Many Thanks !
