As far as I heard, the mozilla/safari plugin for Intel is as stable as the PowerPC-one know and there is going to ship a binary within the forthcoming 0.8.6 bugfix release.
At present, there are no nightly builds for this plugin, so you'ld have to get VLC's source through a nightly tarball or preferably through svn (svn://svn.videolan.org/vlc/trunk) and compile it on your own. A HOWTO for compiling VLC on OSX is available on our developer's page. Note that you need to add this "--enable-mozilla --with-mozilla-sdk-path=extras/contrib/src/gecko-sdk" to VLC's configure line to build the plugin as well. You can find it in /mozilla once everything is done.
