Subtitles always enabled on launch

Since updating my Intel Mac to Ventura, and VLC to 3.0.18, subtitles now default to enabled. I disable them in the Subtitles menu, but they are just enabled again the next time any file with a subtitle track is played.

Is there any way to make VLC never show subtitles?

Or which older version is best to revert to where subtitles default to disabled, as i was previously used to?
