Mac OS Capture Device Not Working

When I go to "Open Capture Device", it will not display correctly, if at all. I've tried using my built-in webcam, I've tried a camcorder to an external HDMI to USB input device, and neither work. Sometimes the first frame will show, but then it acts like it's frozen and no further video is displayed. The audio is about the same. Garbled and absent at times. When I use other software to open these devices like Quicktime and OBS Studio, they play without issue. My hope is to stream with my camcorder using that external HDMI to USB input device, but this roadblock has stopped me in my tracks. I'm hoping there is a setting somewhere that I can toggle to make this work. I've researched quite a bit, and the magical setting seems to be "Directshow", but I don't see that option anywhere in this version. I believe VLC is better than Quicktime by far. So it doesn't make sense to me that it would work on Quicktime and not VLC.
